Natural Progesterone Promoting Granola Bars (No Bake)

Gluten Free - Whole Grains - SuperFoods - Refined Sugar Free


Makes 12 Bars

Prep Time: 15 minutes

Fridge Time: 30-60 minutes


1 ½ cups brown rice cereal (gluten free if needed)

1 cup old fashioned oats (gluten free if needed)

4 Tbl maca powder*

½ cup either sunflower seeds or pumpkin seeds

½ cup honey

2 Tbl coconut oil

pinch fine sea salt

½ cup almond butter (or any nut/seed butter)


Directions:

For 8x8” dish, line with parchment paper & coat with non-stick spray.

For Granola Bar™ Pan (GBP), no prep required.

In medium bowl stir rice cereal, oats, maca powder and seeds - set aside.

In medium pot over medium heat stir honey, coconut oil and salt. Let boil for 1 minute, stirring the whole time. Remove from heat, stir in almond butter.

Pour warm honey mix over the dry ingredients & stir until combined.

For 8x8” dish pour mix into prepared pan, press mix in well. Optional - add mini chocolate chips to tops, press in.

For GBP, divide mix up between the 12 cavities, press mix in well. Optional - add mini chocolate chips to tops, press in.

Place pan in fridge for 60 minutes or in freezer for 30 minutes for bars to set.

Once bars have hardened…

8x8” pan: grab corners of parchment paper to lift out of pan. Place on cutting board - cut into 12 bars.

GBP: pull edges of pan away from center to release edges of bars, press from bottom to pop out bars individually.

Enjoy!!


Store in airtight container on counter for 3-5 days or in fridge for 7-10 days.

These bars get softer the warmer they get so for stiffer bars store in fridge.

*Note about maca root powder: even though maca root is a vegetable it is advised that you consult your physician before adding concentrated amounts to your diet. There are no studies proving that maca root, seeds and nuts will directly increase progesterone levels, but these ingredients are linked with balanced levels of hormones and helping the body handle stress. In turn, the body is able to utilize progesterone more efficiently.
